Than sheeted dough get curling(rolling) with the help of ranging special mesh belt along the moulding belt the mes dragging on the leading edge of the dough sheet and causing it to roll back. As it is important that the dough retains a degree of extensibility as it leaves the curling second prior to final moulding, damage is minimized.
